I would have moved to Italy...
I did own a Mk1 Uno. It was wonderful but then I am only 5'7" so your issues did not affect me. It was the 1.3 70SL model. But when I took it in for service, the 1.1 45L model loan car always seemed a lot faster.

That 1.3 would be the same engine I had in my Regata 70. I always found it powerful enough even on long journeys, and overtaking trucks through Spain. 4-speed box. Still miss that car.
You might have a point about the 1.1 in the Uno, the smaller engines did always feel livelier in the smaller FIATs.

Nerd alert. The 45 was a one litre FIRE engine, it had, I think, a reduced number of crankshaft bearings less internal drag. Entry level was the 45 Formula which used the old 903cc OHV pushrod from the Panda. 60 was 1.1 litre which was a smaller version of the 1.3 used in the 70. The 1.3 was originally 1290cc used in the 128 extended to 1301 in the Uno. The Uno turbo above is the MK2 which used a different 1.4 from the Punto than the original Uno turbo.

Oof. Knowledge.
It was the FIRE engine I was thinking of as having been praised for its performance considering its (lack of) size.

After my mates passed their tests they all went off on the Ford and Mini route I went down the FIAT route. Started in a 128 Sport, then a Strada 105TC (really wanted a 130TC), on to 127 GT and finally a MK1 Uno turbo before I tried something else. Returned to FIAT in 2000 when I bought a Coupé 20v turbo. Haven't been back since, I prefer the easy life of Volvo diesel ownership supplemented with the odd fast Ford now.

That bloke from High Peak autos has recently released a YouTube clip about driving a £250 Panda from Stockport to Malaga or something similar. He got there anyway.

He'll probably get back too. He did plan on doing similar a few weeks ago in a Jaguar I think but decided the cae was an unknown so chickened out and used his own car.... and yet he risked it in a Panda
