Don't drink Absinthe, it's the proper loony juice there, not the sanitised version allowed on sale here. Also, it's disgusting.

The thing is with Prague, it's a city to be enjoyed by walking around, in my opinion. But it'll be so damned cold I'm not sure how much fun that'll be.
The Castle is worth the effort though and, weather depending, it's a pleasant walk over the bridge from the Old Town.

I think I got the cold bit. We have the kit for that and the boots. We do enjoy walking around and soaking in the atmosphere rather than visiting specific places. I become bored of museums recently, and much prefer something to do rather than look at.

Watch yourselves round Wenceslas Square after dark. Known for nefarious individuals out after tourists for pickpocketing etc.

I think the issue later in the evening in January is more that the streets can be pretty dark and empty of people. I don't find it a particularly intimidating place, but I think it's good to be aware.
