I don't think they consider passing one through a sieve. Perhaps if they did there would be less poaching?

Talking about straining... A couple of YouTube videos about poaching eggs invite the chef to strain raw eggs through a sieve before poaching. Poaching is a big enough pfaff anyway without getting another kitchen implement dirty. I think you might mean omelettes, not poached eggs. We have done the straining thing before making omelettes, after seeing it on the TV show "The Bear" (which is really rather excellent). If you like omelettes thin and smooth, it really does make a difference and is worth the effort. I can't imagine how you strain an egg through a sieve and then poach it?

Yes, I must admit I was struggling to imagine how you could successfully poach an egg that had been through a sieve. 🤔

…or if you just strained the white and added back the intact yolk afterwards.
